We Bite was founded in Pfullingen, Germany by Thomas Issler, who began producing records while serving as a civil servant. The label initially released music from various genres within the hardcore, punk & metal communities, but by the late 1980s had become specialized in hardcore. Titles from the California label Boner Records were pressed under license. This eventually included titles from Taang! Records, BYO, Captain Oi! Records & SST Records. A little later, We Bite was added to the distribution network of the SPV label. In addition to in-house productions, American bands were distributed under license, such as Youth of Today, Ludichrist, 25 Ta Life, Dag Nasty, MDC, Government Issue, The Accüsed, Gorilla Biscuits & others, some for which tours were also organized. Also distributed were magazines & fanzines.

1992 saw the label reintroduce into its portfolio musical styles that it'd been open to earlier in its existence as well as newer genres such as hip-hop, a practice that continued until 2001, after which the label became inactive. Then on March 18, 2009, the company was deleted from the commercial register.

Issler is now an internet marketing trainer.
