The first one that comes to my mind is Amorphis' cover of "Light My Fire." It's a hidden track (#14) at the end of the re-issue of "Tales from The Thousand Lakes" which includes the "Black Winter Day" EP. It has the expected harsh vocal and chugging guitars; but the organ, of course, is a simulation of the original.

The Swedish, and quite irregular, black metal band Woods of Infinity come to mind. They performed cover versions of Swedish girl group Bubbles' "Rock the World", Mike Oldfield's "Moonlight Shadow", Barry Manilow's "Old Songs", and Harold Blake's "Walking in the Air", from the soundtrack to the "The Snowman" animated film.

I've always found Woods of Infinity's cover versions of pop songs intriguing because they display, in my opinion, an ironic involvement with the bathos which rests at the core of black metal, reflected in the contrived pomposity of pop music (and exaggerated take-offs of it). I would've enjoyed to see them expanding this side of their work, but sadly, they've split up.
