As the title states.

I've been wanting to make some of my own melodeath for quite the long time. I don't know if it's true, but to me a lot of the songs seem to follow a similar scale. So what is it?

I do understand musical vocabulary.

Lots of minor, shifting around modes a bit and harmonizing in thirds. You'll find a lot of rhythms that are phrygian or aeolian while the leads seem to exercise more freedom, all while staying within the same key. The root of the lead will often seem to change modes by outlining an add chord. Wide intervals between guitars give a much different feeling than keeping them in the same octave - for example having the rhythm be E2+B2 and the lead playing E3+C3/B3/C3, or having the lead moving two octaves above the root note of the rhythm.

A lot of the feel of bands like In Flames comes from how they arrange the guitar parts, rather than simple harmonizing in thirds, the guitars move around while retaining the same melodies. If you look at tabs of songs from The Jester Race you should be able to figure out what's going on.
