I'm looking for bands (really not picky about genres) who utilize two bassists; bonus points for fretless + fretted combination. Anyone know of any?

Shrum would be a good example of this, featuring Joseph Fontenot and Audie Pitre, both who had played in Acid Bath. They even have acoustic bass at times. Sadly Audie died and that ended up splitting the band, which also happened with Acid Bath.

You say you aren't fussy about genres, does that include non-metal? If so, here's a couple of great bands:

Dianogah -- mostly instrumental post/math-rock band, with 2 bassists.

Pretty sure Big Business used dual basses on several of the songs on their "Here Comes the Waterworks" album. Great record... too bad the record after that was total fucking garbage.

Man is the Bastard (not on archives) had two bassists sort of Sludge/Powerviolence hybrid.

I think Water Torture's also used two basses. I know for a FACT it's usually just bass and drums, but they've credited other bass players on releases.

Tarja Turunen on her solo career (yeah, some commercial mediocre symphonic pop-rock/metal) also used two basses on live performances.

She has a permanent bass player and for some reason also has toured with several second-bass players. It doesn't really make her music much better, I must say.

This is a fact, I've seen them play live they both play the same things. They have a guitar player for their split with SixBrewBantha coming out soon.

The band Canabass from Florida has two bass players and they are p. good MITB clones. Saw them with Water Torture as well (With only one bass player)

I don't think they ever performed with two, but many Primus songs have layered multiple bass lines. Sailing The Seas Of Cheese comes to mind. I feel like such a wuss not adding a PV or sludge band to the list.
