I'm looking for death metal that utilises lots of odd instrument noises. Stuff like "From Wisdom to Hate" era Gorguts, or Negativa.

Seconding Ulcerate

Pyrrhon are probably the closest thing i can think of besides Ulcerate their album "An Excellent Servant But A Terrible Master" is heavily influenced by Gorguts.

Flourishing may also fit what you are looking for. They are kind of a strange post hardcore/death metal hybrid with some FWTH influence.

Gigan may also be worth a look though they are a bit more spacey and psychedelic.

Here are some bands that could fit the request:

Artificial Brain: http://www.youtube.com/watch?v=IfHLmCH7li8
Ketha: http://www.youtube.com/watch?v=yT9fpxMcaAo
Orgone: http://www.youtube.com/watch?v=OEP9iLWLYLY (well, not noisy per se, but they do have a highly unconventional sense of melody)
The Red Chord: http://www.youtube.com/watch?v=Aocz0p5DSmo (not all the time though)
Sickening Horror: http://www.youtube.com/watch?v=IiFTddERitg (they've got the scratch-y chords that Gorguts do)
Virulence: http://www.youtube.com/watch?v=Hp_m9zCPPhs (relentlessly noisy)

Also seconding all the bands mentioned by the above posters; they're all great.
