There is one, ultimate one for me:

- Lake Of Tears - To Die Is To Wake

Second place is reserved for:

- Anathema - Violence

...and then you can try those:

- Dark Tranquillity - The Mind's Eye
- In Flames - The Jester's Dance
- God Dethroned - Away from Emptiness
- Crematory - Visions
- The Gathering - Mandylion
- Sentenced - Mourn
- Mourning Caress - Escape

I'm sure you will like it :D

This is first one that popped to my mind (I'm not sure if this fits your criteria though)

Morbid Angel - Desolate Ways https://www.youtube.com/watch?v=iZPKBAnkEaE

Marty Friedman's Introduction and Scenes albums (for example: https://www.youtube.com/watch?v=BiIx4gWUEBk ), Savatage's The Storm (and most of their instrumentals, tbh), Fates Warning's At Fates' Fingers (not ...Hands!), Joey Tafolla's Out of The Sun https://www.youtube.com/watch?v=zxqeUzzZB5w , Agharta's Solitary https://www.youtube.com/watch?v=4xiDwyKS-k8

+1 votes for Sentenced and LoT as per Xymosys' post :)

Ghost Brigade - 22:22 - Nihil

There are lyrics attached to it, but no singing, and I think the song may be made better by the omission.

There's also La tonene tale by Svikt, which is a melancholic but powerful black metal instrumental.

Yngwie Malmsteen - Crying
All the guitar noodling may turn you off but there's a lot of emotion in it.

When SOP came out, it was this song alone that had me come back to this album. It was covered by quite a few amateurs on YT back then.
