Dezperadoz came immediately to mind. Their debut album The Dawn of Dying is pretty nifty power-thrash, has always had that whole 60's western aesthetic.

There's also Praetorius. Lo-fi traditional metal kinda like Tank, and focuses on frontier themes and the like.

Untamed Land released a strange but very cool album that essentially mixes spaghetti western themes with Summoning worship. It sounds weird, but I've been totally stuck on it for a while now

Wayfarer has always had some element of western themes but their new album World's Blood has a much bolder display of those themes.

I know a bit of horrorpunk that goes into this territory (and some of it is pretty borderline metal) but that western aesthetic just doesn't seem to be popular in metal circles - probably has too many connotations of rockabilly and whatnot. I feel like Volbeat have done something along these lines, although I also feel like most here wouldn't like them.

edit: not metal, but if you're interested - still has a really cool vibe imo:

Yeah, they've done almost an entire album:
Outlaw Gentlemen and Shady Ladies
Hangman's Bodycount, Black Bart, Doc Holiday arer pretty great. There is also the King Diamond track in here (not western related). Personally, I really like Volbeat although they do have a sugary side that can be grating. But I like them overall...

There is also this little Gamma Ray gem, with the terrible German humor intro but the instrumental itself is really very, very, very nice.
