Any opinions on the following idea to get a new sound: Using a 7-string guitar but switching the position of the low B string and the low E? (So assuming BEADGBE, making it EBADGBE) and then dropping the low E (like normal) for (DBADGBE or likely CAGCFAD).

… But why? I don’t see how that type of reentrant tuning would make picking patterns or fingering any easier, and the intervals remain the same, so you’re not achieving a different approach to harmony either.

It doesn't do anything, just adds. Six strings are nice, but seven is nothing, we knows why.
