First off, all apologies if the answer is out there somewhere, but I've been looking for about an hour for a clear answer and can't find it anywhere.

Anyway, I've been meaning to change a rating for a review I wrote a while back (Sonata Arctica - The Days of Grays), I wanted to raise the score a little bit.

I'm not entirely familiar with the protocol of editing reviews. Should I just go back and simply raise the score, or change the score along with editing the entire review (I was already going to revise the conclusion)?

You can change the score without requiring reapproval. If you change the text, it'll go to the mods.
