Necrophagist's song, "The Stillborn One" has classical influence in the riffs (many of their songs do I assume). In fact you can hear the 'Fuer Elise' melody being played on one of the guitars at one point (The Stillborn One). Necrophagist in general has great guitars.

Necrophagist isn't Melodic Death Metal. Children Of Bodom would of been a good call, except they aren't exactly melodeath either, and the OP already mentioned them. Seriously though, OP, Hateform.

By the way, you should check out Megadeth's Ride the Lightning, too. I hear it's really good. Oh yeah, and don't forget Beethoven's Well-Tempered Clavier.
