I'm looking for some prog (prog rock, prog metal, doesn't matter!) with the most insane rhythms possible, like Meshuggah, Dream Theater, and maybe Opeth or Suffocation. The kind of shit that takes dozens of listens to memorize the patterns.

Things I'm NOT looking for: Deathcore, djent, or anything else "core".

Fuck yeah I do, I've heard of them, but I'm glad I heard just how good they are.
As long as its proggy and not core, I'll love it.
Jazz influence would be a plus too, and it would be quite a treat to maybe hear some doom in there.

You'll like Disillusion, great prog metal akin to Opeth. You should check In Mourning, Augury and Gojira (you're probably familiar already though). I could continue with a lot of recs but I'm lazy, enjoy this 14 minutes song for now!

Disillusion was fucking awesome, and I love Augury and Gojira, but I'll check out In Mourning.
Other shit I dig is gutturals as opposed to high screams (outside of black metal of course).
I'm also a big fan of Enslaved, if that means anything.

Oh, I know about them, as well as Trioscapes and a few others.
Just be warned, I really was underwhelmed by Animals As Leaders and their side projects, especially on AAL's first album.

Tech-throom pioneers Confessor pretty much began the rhythm-centric "math metal" thing in my book, if you don't already know them. Kobong was probably the first Meshuggah-influenced band, and as such they take after their pre-djent sound. Early metallic math rock like Breadwinner and Buzzard should work too. Oh, and Blotted Science is obligatory too.

Abigor's Time Is the Sulphur in the Veins of the Saint is one of the most satisfying albums I've heard in terms of rhythmic complexity.

I was coming in to also meantion Lioncloth who is basically Confessor minus vocals.

And I was really shocked/happy to see some Breadwinner up in here. heheheh, dude, Fredrik Thordendal coined the "djent' term and it's obviously the main influence of the genre. Perhaps Meshuggah is not djent itself (that's debatable) but bands like Periphery aren't quite far from their sound. But yeah, it's shit.

While yes, they are the main influence on the genre, they are different than the bands that fall under "djent", they're more groove metal oriented and breakdownless, so...
Pathways was pretty cool though, I don't care about "tr00" shit.
If its not core-y, I'll pretty much like it.
I mean I listen to black metal, that's about as talentless as it gets.

EDIT: After listening to all of Pathways' stuff, they're waaaaaay too core.

These guys totally ripped on Meshuggah circa Destroy Erase Improve, but they did it well. Also this was from 2002 so most core bands were busy raping Slaughter of the Soul at the time.

You could also give Keelhaul and Craw a go, both come from a more Noise Rock direction.

Also I love Defeated Sanity, I just wish they were faster and more prog.
My perfect band would be Suffo/DS brutality and technicality, but with the rhythmically progressive edge of Meshuggah, plus DT style composition and melody, as well as their instrumental duels and solos, along with Gojira/Meshuggah grooves, black metal influence, jazz fusion, folk/oriental shit and all types of extreme vocals used (minus core) as well as aggressive cleans.

Any more jazz fusion out there?
I really dig this new band Trioscapes, as well as Panzerballet, Mestis, and T.R.A.M.
AAL is iffy though, they're more just metal with a jazzy bit thrown in every once in a while.
