From what I understand their sound is very inconsistent in between albums but still always good. Where do I start with them?

Demon fucking Entrails is where it's at. Monotheist is also excellent though obviously very different. I don't really that anything in between.

For Hellhammer the best starting point would be either the Demon Entrails comp or Satanic Rites demo. For Celtic Frost I'd say Morbid Tales, To Mega Therion and Monotheist. In that order.

Hellhammer - Demon Entrals, this has everything you need.
Celtic Frost - Morbid Tales if you want to continue with that Hellhammer sound.

I would say go for "Morbid Tales" and "To Mega Therion" Celtic Frost wise, however I am also yet to delve into Hellhammer. Would you guys say that the "Demon Entrail's" collection is more essential than the "Apocalyptic Raids" E.P.

I was actually planning on starting with the E.P?

Absolutely. The sound on the EP is kind of dry anyway, so the songs that also appear on "Satanic Rites" sound better on the demo.

Inconsistent isnt a strong enough word...some are in the top extremem metal of all time while others are complete shit...

Personally I like To Mega Therion/Monotheist/Morbid Tales in that order.

So little Hellhammer to choose from, it's best to just get both the demo compilation and the EP. As for Celtic Frost, save yourself the wasted time and get Warhammer's discography instead.

Yes, Warhammer. Everything Celtic Frost did was lame in comparison to Hellhammer, Warhammer is the only worthy successor. The only decent stuff Celtic Frost did were the first two EPs, and even those pale in comparison to "Apocalyptic Raids" and "Satanic Rites".
