I don't really know how else to describe it...stuff like Fejd and some Otyg material would be the best way to describe it. I'm not sure if I'm just asking for acoustic folk because there seems to be some difference in the sound...

Folk metal heavy on the folk without the metal, sounds like you want neofolk music. I'd recommend going on Last FM and just look up all the ones you can find that are tagged under "neofolk".

Eluveitie have an all folk release if that's the kind of thing you're looking for.

Of The Wand & The Moon, very good neofolk might be what you're looking for.

I think you need to hear MANEGARM's "Urminnes Hävd - The Forest Sessions " EP. (btw - their albums from "Vredens Tid" on are superb!)

Yeah, I was going to suggest Eluveitie's Evocation as well. I really loved it, though others don't hold it in as high a regard.

Diadema Tristis. They have a few metal moments on their album Ways of Relief which are complete balls, but it's mostly folk and the folk is quite a good listen.

Tuatha de Danann is a good soft Folk metal band. Try it!

Try Waldteufel. They are straight folk on their first album, but have metal touches on later releases.

Definitely check out the song RaKH II by Altan Urag for some Mongolian folk.
