I know there are bands/albums out there that use entirely/mostly acoustic guitar(s), I just haven't found many. I know that Ulver made one, and that's about it. For example: https://www.youtube.com/watch?v=nkUv_4WTVdE

-Doesn't have to be instrumental
-A mix of emotions would be nice (i.e. not all depressing, not all happy)
-Other instruments are fine, within reason. Hell, symphonic elements would sound great.

As above, speed or intensity coming in waves would be nice, I just don't want it to be too 'boring' with really simple arpeggios. Thanks!

October Falls*, Sorg Uten Tårer*, Neun Welten (usually has accompanying instruments), Sonnentau (has vocals and light accompaniment), Tenhi (has vocals and drums). also, if you like Celtic sounds, get some Greg Joy albums. Svafnir's Aufbruch is also interesting--has a couple songs that build up to a metal climax, rather than being the same old sleepy acoustic music.

oh, and I only know of one album** by Ainulindale (The Lay of Leithian), and one by Fjällstorm (Midnattssolen) but they're pretty similar to that Ulver album. Vali's Forlatt is pretty good, too. Musk Ox is another one people typically mention.

**oh shit! it turns out they finally released a second album... just last week (10 years since the first).

searching these band names will probably dig up old threads asking the same question.

Empyrium's "Where at Night the Wood-Grouse Plays" is pretty much what you described, except that it uses those "boring" arpeggios a lot.
