Huge fan of old grind, I believe someone already mentioned Terrorizer, ND, Extreme Noise Terror, etc. The punk-er stuff more in the underground appeals to me, take In Disgust, Agathocles, Magrudergrind (good friends of mine!) as examples. Not a huge fan of the metal side of grind, not really sure how it is really grindcore at all, most of the time. Insect Warfare rules though, I got to see them live on their only east coast show before they broke up.

I never understood the hype with early Carcass but they and Napalm Death were undisputed leaders of the grind movement. I pretty much detest all newer grindbands from the USA unless they have an overwhelming death metal sound. Pig Destroyer sucks,ugh.

I believe the mere existence of "Fear Emptiness Despair" will counter that viewpoint, at least for me

I've only recently got into grind, and though I'm not familiar w/ that many bands (other than the obvious like ND, Nasum), I enjoy it. I like nearly every type of grind I've heard as well, though eGrind is something I enjoy in spurts rather than all the time (Engravor, Ganglia, etc). I'd have to say my favorite grindcore band is probably Nasum, because I think during their short run there was more consistency than what ND has shown. I also really like ND, and I'm a major fan of Eternal Mystery, Vomitorial Corpulence, and The Right Wing Conspiracy. I need to check out Phobia, Insect Warfare and Megrudergrind - a friend has highly recommended those to me.
